Although a waiter/waitress may use a pen and pad, they need to have an excellent memory to help them remember details about the customers and their orders during their shift. 13. Ability to remain calm

Waiters and waitresses need to work at a fast pace while maintaining a calm and confident demeanor. A good waiter or waitress will work fast and accurately without looking like they are rushing between tasks.
